Like I've said before, the easiest way for me to attack this gluten-free diet is to try to focus on the things we CAN have, and this YUMMY recipe is an example.
All that was done is to chop the veggies into large chunks (peeled yam, squashes, whole mushrooms) drizzle with oil--olive if you're a snob like that, and then bake. All the recipes I've read say to bake at 400 degrees, but my oven was at 250 for my meat and so I just did it for the few hours that the meat was in.
I'm tellin' ya...delish!
***Ooops, I almost forgot, after the oil I threw on some herbs like rosemary and thyme if I remember right....

Yum! That looks delicious, we're not gluten-free but we are peanut, tree nut, egg, and dairy free. This would fit right in at our house :) Thanks for the tip, I'll put this one on my meal plan for sure!
